  * 5lb Top sirloin piece (tied nicely)
  * salt
  * pepper

==== Steps ====
Season the roast with salt and pepper \\ Sear it in a skillet on the stove. \\ Place it on a rack in a roasting pan in the oven and cook it at 200° \\ Remove when thermometer inserted in the center reads 130° (about 3 hours 30 minutes)
